Maple is a deciduous tree, with its characteristic lobed leaf most widely known as the national symbol of Canada. You can find it in the Canadian flag as well as in the Air-Canada symbol, with the city of Chatham in Ontario, Canada, being known as “Maple City”. Maple is also addressed as Acer.

The hard wood of maple tree has many uses in furniture, flooring, as pulpwood in paper industry, in agriculture for pollination, as tonewood in musical instruments, and above all, in the widely consumed maple syrup.

In the United States, syrup can bear the word “maple” only if it is made entirely from maple sap; and in Canada, maple syrup must contain at least 66% sugar (sucrose) and made entirely from maple sap.


GRADE B MAPLE SYRUP PREPARATION

Maple syrup was first collected and used by the aborigines of North America.
From the maple tree, sweet sap is obtained and boiled, from which maple sugar (or maple taffy) and maple syrup is made.

One liter of syrup is prepared by about 40 liters of sugar maple sap. Maple syrup is best made from the species (Acer saccharum). It can be made from other species as well, but the results are not as good.

Maple syrup is graded based on its translucency and density, e.g. Grade B maple syrup.
